INGREDIENTS:

  • 1 can chickpeas (drained and rinsed)
  • 1 ripe avocado
  • 2 whole wheat tortillas
  • 1 tbsp lemon juice
  • ½ tsp cumin
  • Salt and black pepper to taste
  • 1 cup fresh spinach
  • 1 tomato (sliced)
  • ¼ red onion (thinly sliced)

INSTRUCTIONS:

  1. Smash the chickpeas. In a bowl, mash chickpeas with a fork until about half are broken down — keep it chunky for texture. Add lemon juice, cumin, salt, and pepper. Mix well.
  2. Add the avocado. Cut the avocado in half, remove the pit, and scoop the flesh into the bowl. Mash it into the chickpea mixture. Taste and adjust seasoning.
  3. Warm the tortillas. Warm whole-wheat tortillas in a dry pan for 30 seconds per side, or microwave for 20 seconds.
  4. Assemble and wrap. Lay out tortillas and spread the chickpea-avocado mixture down the center. Top with spinach, tomato slices, and red onion.
  5. Wrap and serve. Fold in the sides and roll tightly. Slice in half diagonally and serve immediately.
