INGREDIENTS:

  • 2 salmon fillets (about 150g each)
  • 4 cloves garlic (minced)
  • 1 lemon (sliced + juice of half)
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley or dill (chopped)
  • Salt and black pepper to taste
  • 1 tbsp capers (optional)

INSTRUCTIONS:

  1. Preheat the oven. Preheat oven to 200°C (400°F). Line a baking dish with parchment paper or lightly grease it.
  2. Season the salmon. Place salmon fillets in the baking dish. Drizzle with olive oil and lemon juice. Rub minced garlic evenly over each fillet. Season generously with salt and pepper.
  3. Add toppings. Lay lemon slices on top of each fillet. Scatter capers around if using. Sprinkle with fresh parsley or dill.
  4. Bake the salmon. Bake for 12–15 minutes, depending on thickness. Salmon is done when it flakes easily with a fork, and the center is just opaque. Don’t overbake — it dries out quickly!
  5. Serve and enjoy. Serve immediately with steamed vegetables, brown rice, or a fresh salad.
