Spinach and Mushroom Egg Scramble — Easy High-Protein Healthy Breakfast

INGREDIENTS:
- 2 large eggs
- 1 egg white
- 1 cup fresh spinach
- ½ cup sliced mushrooms (cremini or button)
- 2 tbsp diced white onion
- 1 garlic clove, minced
- 1 tsp olive oil or butter
- Salt and black pepper to taste
- Optional: 1 tbsp grated parmesan, sliced avocado to serve
INSTRUCTIONS:
- Whisk the eggs. Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until fully blended.
- Sauté the onion. Heat oil in a non-stick skillet over medium heat. Add onion and cook for 2 to 3 minutes until softened.
- Cook the mushrooms. Add mushrooms and garlic. Cook for 3 to 4 minutes, stirring occasionally, until mushrooms are lightly browned.
- Wilt the spinach. Add spinach and toss gently for 1 to 2 minutes until wilted. Push the veggie mix to one side of the pan.
- Scramble the eggs. Lower the heat to medium-low. Add the egg mixture to the empty side of the pan. Stir slowly until softly scrambled.
- Combine and serve. Gently fold the veggies into the eggs. Remove from the heat and serve immediately, with avocado slices, if desired.
