INGREDIENTS:

  • 2 cups brown rice (cooked)
  • 2 medium sweet potatoes (cubed)
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (fresh or frozen)
  • ½ red onion (diced)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • Juice of 2 limes
  • ¼ cup fresh cilantro

INSTRUCTIONS:

  1. Roast the sweet potato. Preheat oven to 200°C (400°F). Toss cubed sweet potato with 1 tbsp olive oil, cumin, chili powder, salt, and pepper. Roast for 25 minutes, flipping halfway, until tender and golden.
  2. Season the black beans. In a small pan, heat remaining olive oil over medium heat. Add black beans, red onion, and a pinch of cumin and salt. Cook for 5 minutes.
  3. Warm the corn. Add corn to the bean pan and stir for 2 minutes until heated through. Remove from heat.
  4. Assemble the bowls. Divide cooked brown rice between 4 bowls. Top with roasted sweet potato and black bean and corn mixture.
  5. Finish and serve. Squeeze fresh lime juice over each bowl and garnish with cilantro. Serve warm or at room temperature.
